Yuba - Dried Soy Protein - The first time I tasted yuba was when I was photographing the recipe. I heard a lot of opinions about yuba, but until I tasted it I didn't believe it, so there you go, I can agree with the popular opinion - yuba tastes better than tofu. Besides containing a lot more protein, it's simply tastier.
You can replace the yuba with tofu, chicken breast, chickpeas, or anything else you like.

Ingredients:
150 grams wheat noodles
100 grams dried yuba / tofu / chicken breast / chicks
Medium onion
One drumstick
1/4 medium white cabbage
One or two carrots
A tablespoon of oil
3 tablespoons coconut cream – optional
100 grams shiitake mushrooms
For seasoning:
2 teaspoons rice vinegar
A tablespoon of soy sauce
3 tablespoons sugar-free sweet chili
2 teaspoons chili oil
A teaspoon of Asian spice mix
Instead of the spice mix: a teaspoon of salt, a teaspoon of chili powder/Szechuan pepper, a teaspoon of sugar or sugar substitute, a teaspoon of black pepper powder, a pinch of cinnamon
For decoration:
Coriander, peanuts, sesame seeds and green onions

Preparation method:
Soak the yuba in cold water until soft (5-10 minutes)
Cook the noodles according to manufacturer's instructions and drain - add a little oil to the pot with the water so the noodles don't stick.
Peel the carrots and onions, cut the vegetables into strips except for the mushrooms, and sauté all the vegetables with a tablespoon of oil until partially softened.
Add the noodles, seasoning and coconut cream and stir, continue cooking over medium heat for another 3-5 minutes and remove from heat.
