It's been a long time since I posted a recipe here that goes well with your morning or afternoon coffee. So, it's not like anyone would object to something sweet with coffee, but there are always those recipes that are just right, that blend in best with the aroma of coffee.
These cookies are crunchy, healthy, nutritious, almost flour-free, and stay fresh for a long time.
They are easy to prepare and last a long time.

Ingredients ✎:
2 tablespoons spelt flour
2 cups oatmeal
2 teaspoons cinnamon - optional
A teaspoon of baking powder
2 eggs
1/2 cup brown sugar/sugar substitute
1/3 cup coconut oil - any other oil can be used except olive oil (as long as it is not bitter)
A teaspoon of vanilla extract
1/3 cup chocolate chips/dark chocolate
You can add toppings such as cranberries, almonds, and more.
1/2 teaspoon salt
For vegetarians: Instead of eggs - 1/2 cup unsweetened applesauce or a whole banana
How to prepare: ✎
Preheat oven to 180 degrees.
Mix all dry ingredients together including the chocolate or toppings of your choice.
Then add all the wet ingredients and mix well.
Form small balls on baking paper at equal intervals, then flatten the balls with your fingers.
Place in the oven and bake for 13 minutes. (May vary depending on the type of oven)
Cool the cookies and only then can they be eaten and stored in an airtight container.
