You already know that I don't connect with the concept of spending a long time in the kitchen.
In my opinion, excellent dishes can be produced in a short amount of time working in the kitchen (without entering a chef's kitchen, which is a completely different story).
I'm talking about our cuisine, the folk cuisine, on a daily basis, between work with the children, afternoon errands and the desire for rest, exam period or just plain tiredness.
There's not much time to stand in the kitchen for a long time, and the truth is, there's not always the desire. So this recipe (which took me 25 minutes to prepare, including photos) will serve exactly the need for a hot, delicious, and quick dish.

What do you need? (Suitable for 5 servings - medium to large plates)
200g package of bean noodles
2 gambas
onion
8 mushrooms
50 grams edamame (without pods)
2 tablespoons regular/olive oil (sesame oil is recommended) - for sautéing the vegetables
A tablespoon of natural peanut butter
1 tablespoon reduced-sodium soy sauce
A teaspoon of chili powder
A pinch of paprika
Half a teaspoon of crushed garlic/fresh garlic clove
A teaspoon of salt
2 tablespoons coconut cream
6 sprigs of coriander/parsley
Mint sprig (optional)
Preparation method:
Sauté the onion, mushrooms, and mushrooms until partially softened, then add the crushed garlic.
At the same time, soak bean noodles in water according to manufacturer's instructions, then drain. Use scissors to cut the bean noodles so they are not too long.
Place the edamame in a plastic bowl, cover with water, heat in the microwave for 3 minutes and drain the water.
Add the bean noodles, coriander, edamame, chili powder, paprika, salt and coconut cream to the vegetable mixture and mix well.
Sauté everything for another 2-3 minutes and turn off the heat.
Serve with peeled and sliced almonds (lower in calories than peanuts)
