So this week I wanted something hot, healthy, and quick to make. After some thought, I decided to make the simplest and most delicious vegetable noodles.
Ingredients:
2 tablespoons sesame oil
4 medium carrots
2 medium onions
1/2 large cabbage
Teriyaki spoon
2 tablespoons low-sodium soy sauce
130 grams rice noodles
Preparation method:
Cut the onion into strips and fry with a tablespoon of sesame oil until translucent.
At the same time, cut thin strips of carrot and add to the pan.
Fry them for a few minutes until the carrots soften slightly and add cabbage cut into thin strips.
Add another tablespoon of sesame oil and steam all the vegetables for at least 10 minutes over medium heat, stirring the vegetables every two minutes.
Once the cabbage has reduced in volume, add 2 tablespoons of low-sodium soy sauce and a tablespoon of teriyaki (can be replaced with reduced-sugar sweet chili sauce). Cook for another 2-3 minutes, stirring to absorb the flavors, and turn off the heat.
Rice noodles:
Heat a pot of boiling water, when the water reaches a boil, add the noodles for 2-3 minutes.
Then rinse with cold water and drain.
At the end of the whole process, combine the noodles with the vegetables and mix. -The amount is enough for a few days so you can take it with you to work/school the next day.
